Beautiful Boulder on Design Sponge

I had a fun little surprise waiting for me this morning when I got to work and checked out all of my favorite blogs like I do every morning.  Boulder was featured on Design Sponge!  A little background, I attended the University of Colorado and loved every minute of living in Boulder, Colorado.  I spent five fabulous years there from dorm life to spending my summers nannying, Boulder had it all.  Design Sponge really brought me back and touched on all of my favorite spots.

Eating in Boulder:

Design Sponge really hit it out of the park in this category because I totally agree with each and every place they picked out.  A few of them I don't know, so a trip back to Boulder has just become a travel must in 2013.

With a huge crowd waiting each and every Saturday and Sunday morning you know this place must be the best.  Grits and Beignets are a must!

"Show up at Lucille’s for breakfast and expect not to be hungry for the rest of the day. The Creole restaurant is tucked into an old yellow Victorian on 14th street, and tables are packed into the rooms. Fill up on beignets, chicory coffee and shrimp and grits." -Design Sponge

Another favorite breakfast spot of mine was The Buff, $1 mimosas and Bloody Marys just can't be beat!

I want Frends!

No not friends, I have those, I want some FRENDS! How awesome are these headphones and earbuds? They add just the right amount of glitz to your music listening, and they don't have a ridiculous price tag!

They've even got rose gold!
You can buy Frends at Best Buy and Apple Stores, check out their Web site  for the full line!

Portabella, Red Pepper and Goat Cheese Wrap

This wrap is similar to the grilled portabella pita we have made, but its not quite the same! Still so delicious though! It's fairly light, but still filling,  I would love to try this again when it's warm out, and grill everything on the grill rather than the stove top, to really get that grilled flavor.

Ingredients:
half of a white onion, sliced into 1/4 inch pieces
1-2 red bell peppers, sliced into 1/4 inch pieces
olive oil
garlic powder
paprika
dried basil
salt & pepper
balsamic vinegar
large portabella mushrooms, cleaned and stem removed (1 per wrap)

After you cut up your onions and red peppers, you will need to saute them. Put them in a medium pan, drizzle with a little bit of olive oil, season with salt, pepper, garlic powder, paprika and dried basil (about 1/2 tsp of each). Cook on medium high heat until the veggies are tender, about 15 minutes.

While the onions and peppers are cooking, drizzle your mushrooms with olive oil (i used my finger to rub the olive oil around to coat the mushroom), sprinkle with the same spices you used on the onions and peppers. Cook these on medium high too, for about 10 minutes, flipping every few minutes. The mushrooms will brown and little, and the just poke them with a fork or knife to see if they are tender, then remove from the pan, and slice into 1/2 inch slices.

Prepare your wraps: spread about 1-2 Tbsp of goat cheese down the middle of the tortilla, add the slices of mushrooms (one full mushroom per wrap), and a few slices of the peppers and onions. Wrap it up like a burrito. Add a Tbsp of olive oil to the same pan you cooked your mushrooms in, and keep the burner on Medium High.

Place your wraps into the skillet, seam down and cook for a few minutes on each side, until the tortilla crisps up and starts browning. Remove the wrap, slice in half and enjoy!

This is a great meal (lunch or dinner) during any season. You can alter it to your liking by using different seasonings, adding some greens, or using different flavors of tortillas, get creative!

DIY:Popcorn Tin Dog Food Container

Well the holidays are over and we are smack dab in the middle of winter and with nothing to look forward to but Spring. Its cold and dark ... okay enough complaining and lets DIY!  We all have them (especially if you are a Topsy's fan) those holiday popcorn tins that take up too much room in your basement.  They are the perfect size but are usually so cheesy looking.  Turn your tin into something cute and functional!

Dog Food Tin.

Before we were using an eye sore of a Tupperware that only held about 1/3 of a big bag of dog food and now the popcorn tin hold almost a full bag! Upgrade

Happy New Year! I hope everyone enjoyed the Holidays filled with food, fun, and laughter! As we enter the new year, and people set goals and resolutions, trying to focus on being a better person in 2013, I thought I would theme today's Words for Wednesday with these resolutions.
