Summer Lasagna


If you are looking for a fresh summer dish, this is it! Fairly easy, and very delicious, made fresh with veggies from the Farmers' Market. No baking required!

 Ingredients:
1 cup ricotta cheese
1/4 cup grated Parmesan
3 tbsp olive oil
salt and ground pepper
8 lasagna noodles, broke in half, cooked and drained
1 clove of garlic, minced
2 pints cherry tomatoes (we used 2 large tomatoes)
2 small zucchini
1/2 cup torn basil leaves

Grilled Seasoned Okra

Okra has always been one of my favorite veggies, because it's most commonly served fried (thanks Grandma).  We found a good, quick grilled recipe since we bought some fresh Okra from the OP Farmers Market.  
Heat grill to medium heat
Wash Okra with cold water and pat dry with paper towel
Cut off the end of the okra and put in large bowl for seasoning
Melt 1 tbs of butter and pour over okra
Mix desired seasoning and sprinkle over butter and okra mixture, toss to coat evenly
(We used Garlic, Cayenne Pepper, Salt, Pepper, Celery Seed) ~1/2 tsp each
Slide onto skewers and place on Grill
Grill each side about 2-4 minute each

Art for Joplin

Moosylvania, The Great State of Design, is having a poster sale and 100% of the earnings will go diretly to Joplin, Missouri's chapter of United Way.  Art for Joplin's motto "Show me Art, Show me Hope" is very inspiring, hit by a devestating Tornado May 22, 2011 "hope" is a very substantial word that all the residents of Joplin are holding onto.  Each print is unique and made by hand and then numbered when ordered.  This project is so special and benefits the relief of Joplin.
