These peppers are a delicious, healthy and filling meal that I recommend you try! You really only need one half of pepper a person, so this recipe should feed 6 people.
Ingredients
1 lb lean ground turkey or beef
3 large red bell peppers
2 cups spaghetti sauce
1 tsp Italian seasoning
1tsp garlic powder
1/2 to 1 cup chopped spinach (fresh or frozen)
1/2 cup grated Parmesan cheese (2 tbs for the meat mixture, 6 for the top of the peppers)
Preheat oven to 450 degrees. Line a baking sheet with foil, and spray with non-stick cooking spray.
Wash peppers, and cut around the stem and remove. Cut peppers in half and take out seeds and ribs, put halved peppers on the baking sheet.
Cook the turkey in a saucepan on medium-high heat, breaking up the turkey while its cooking. When the turkey is close to done add the sauce, Italian seasoning, garlic powder, salt and pepper. Stir and cook until turkey is done and no longer pink.
Add the spinach and Parmesan and stir well until everything is combined.
Spoon the turkey mixture into each pepper, enough to fill the pepper. Top each one with additional Parmesan.
Bake for 20-30 minutes until cheese is melted and golden brown. Enjoy!
