Cinnamon Roll Coffee Cake


I love the recipes that Val posts on her blog, ValSoCal . Came across this coffee cake recipe and new I had to try it. I don't really bake a lot, but figured this was easy enough, and it would probably taste good no matter what.


Ingredients
1 tube Large refrigerated cinnamon rolls with cream cheese icing (I used 2 tubes, to fill in holes)
2 (8 oz) packages cream cheese, softened
3 eggs
3/4 cup sugar
1 tsp vanilla extract
1/4 cup chopped walnuts or pecans (optional, I left these out)
1/4 cup all purpose flour
1/4 cup quick cooking oats
1/4 cup brown sugar
1 1/2 tsp cinnamon
3 Tbsp butter, melted
whipped cream and additional cinnamon for topping (option, I also left these off)



Preheat oven to 350 degrees.

Unroll the tube(s) of cinnamon rolls into one long rectangle. (easier said than done!) I am embarrassed by this picture, but I had to post so you could see how difficult, and not very pretty this step is. Don't feel bad if yours looks like this, not to worry, it will still taste and look great!

In a large bowl, beat cream cheese, eggs, sugar and vanilla until smooth. Pour over crust.


In a small bowl, combine the nuts (optional), flour, oats, brown sugar and cinnamon. Stir in the melted butter, sprinkle over cream cheese layer.

Bake at 350 degrees for 25 to 30 minutes.


Drizzle with the icing packet(s). Let stand for 15 minutes before serving. Serve with fresh whipped cream and cinnamon. MMMM MMMM!! This is just to die for!
