Real Life Lion King

A wildlife photographer captures an unbelievable scenario leaving a Lioness in a rather familiar situation.  Remember the scene from Lion King that left every child or adult in tears? Well below takes place in Kenya at Masai Mara a game ranch. 


A helpless looking Lioness, after her cub slipped down a ravine and struggled to catch his footing to make it back up to mom.


Others come to the rescue but they too realize its too steep for their liking.


So mom goes for it, risking it all for her youngster,


Safe in the jaws of mom, the cub is reunited, now the dramatic climb.


Ending with tears and licks of joy! unlike the Disney story we all know so well. Thank goodness Scar wasn't involved in this one.

Last Taste of Summer

As Fall approaches we are running out of warm grilling nights, last night was one of those nights so I fired up the BBQ threw on some veggies and whipped together this grilled Pasta Salad.  Now if only the nights will stay like this. 

Warm Pasta Salad with Italian Turkey Sausage

Ingredients
Non-stick Cooking Spray
5 Tablespoons Olive Oil
6 Tablespoons Red-Wine Vinegar
2 Garlic Cloves, minced
1 teaspoon Dried Oregano ( I used Italian Seasoning)
3/4 teaspoon Salt
1/2 teaspoon Black Pepper
2 Plum Tomatoes, halved lengthwise
1 Eggplant, cut into 1/2 inch slices
1 Large Red Onion, cut into 1/2 inch slices
2 Italian Turkey Sausages
8 oz Wagon Wheel Pasta

1. Prepare Grill and coat with non-stick cooking spray.  For dressing, whisk together 4 Tablespoons of the olive oil, the vinegar, garlic, oregano, salt and pepper.  Set aside.
2.Brush tomatoes, eggplant, and onion with the remaining olive oil.  Pierce sausages several times with the point of a small knife.  Grill vegetables and sausages, turning often, until sausages are done and veggies are tender.
3. Meanwhile cook pasta according to package, drain and place in a large bowl.
4. Remove vegetables from grill and chop into bite-size pieces, cut sausages into coins. Add to pasta and drizzle the dressing and toss to coat.

Fall Firsts- TV Premieres

I love this time of year, when all the new fall shows are premiering! I am a sucker though, and have a horrible track record for shows I love getting canceled after the first season, or even first few episodes, like last year's Lone Star on FOX.  I was so sad I wouldn't get to see that hottie Bobby's face every week anymore. Well we will see how this year's premieres go, hopefully I won't get any shows canceled. Here are some of the fall premieres that are must-sees at our house:

FOX: The New Girl
Jess Day (Zooey Deschanel) moves in with 3 single guys after a bad break up. These 4, along with Jess' childhood friend,  form an unexpected dysfunctional family.
Premieres 9/20 at 8 pm on FOX

ABC: Pan Am
Join the 1963 crew of Pan Am, the largest and more prestigious airline at the time, as they go city to city and give us a look into a historical era. Christina Ricci plays stewardess Maggie Ryan, who won't take no for an answer.
Premieres 9/25 at 9 pm on ABC

ABC: Revenge
Emily Thorne (Emily Van Camp) returns to her old neighborhood in The Hamptons with a vengeance. She has returned to take revenge on something horrible that ruined her family and reputation. A crazy biotch in the Hamptons, how can this show not be awesome? We will see.
Premieres  9/21 at 9 pm on ABC

New York Doctor, Zoe Hart (Rachel Bilson), accepts a job in Alabama from a stranger, despite her dream to follow in her father's footsteps. When she gets there she realizes the doctor has passed away and has left half of his practice to her. Out of her element, Zoe doesn't exactly receive southern hospitality from the other doctor in town. If you loved Summer from The OC (and who didn't?) you will probably be giving this show a try. Hopefully it doesn't disappoint.
Premieres 9/26 at 8 pm on The CW


NBC: Whitney
I don't know if you have seen comedian Whitney Cummings on Chelsea Lately, but she is freaking hilarious! Hopefully this show is just as funny. About a happily unmarried couple and their close-knit group of friends.
Premieres 9/22 at 8:30 pm on NBC.

NBC: Prime Suspect
Mario Bello is a NYPD homicide detective, who has just transferred to a new squad. I hope I love the show as much as a love Mario Bello, she seems like such a bad a**!

Pan-Fried Onion Dip


This onion dip is the perfect football party appetizer, it will put Guy's onion dip to shame! Your guests will absolutely love it! 

Ingredients
2 large yellow onions
4 tbsp butter
1/4 cup vegetable oil
1/4 tsp ground cayenne pepper
1 tsp salt
1/2 tsp ground black pepper
4 oz cream cheese, at room temperature
1/2 c sour cream
1/2 c mayonnaise

Cut the onions in half and then slice them into 1/8-inch thick half-rounds. It will end up being about 3 cups of onions.

Heat the butter and oil in a large saute pan over medium heat, add the onions, cayenne, salt and pepper and saute for 10 minutes.

Reduce the heat to medium-low and cook, stirring occasionally, for 20 to 30 more minutes until the onions are browned and caramelized

Allow the onions to cool.

Combine the cream cheese, sour cream and mayonnaise in a mixing bowl, stirring until smooth. Add the onions and mix well. Serve at room temperature. Enjoy!

The Perfect Wedding Gift

Need the perfect wedding gift, but on a budget?

I did and I was! I needed a gift that was going to be meaningful, something the bride and groom would keep and always remember...but I was definitely on a budget. I work for a non-profit, and welllllll lets just say...I am no millionaire!

I saw this idea on Pinterest and thought this is perfect! I bought an Atlas and got to work. I cut out the three cities that meant the most to the bride & groom, Nappa Valley (where they got engaged), San Diego (where they live) and Laguna Beach (where they got married).


I think this is the perfect gift for anyone who wants to get a meaningful wedding present but is unable to spend a fortune! Oh and everyone loved it!!

Grilled Bruschetta Chicken

We are trying to get in some last minute grilling, as well as tomatodishes while the weather is still nice and the tomatoes are still in season. Here is a perfect recipe that includes both.

Ingredients
4-5 chicken breasts
2 Tbsp balsamic vinegar
2 Tbsp olive oil
1/4 c onion, chopped
salt & pepper to taste
2 cloves of garlic, minced
3-4 Tbsp fresh basil, chopped
3 small to medium sized tomatoes, chopped
4 oz mozzarella, cubed


Combine chopped onion, olive oil, balsamic, salt and pepper, chopped tomatoes, garlic and basil in a bowl and set aside while you prepare and grill the chicken.


Season chicken with salt and pepper, and grill about 5 minutes on each side, until no longer pink in the middle.

Add the diced mozzarella to the tomato mixture and scoop on top of the chicken, making sure to get some juice on there.

That's it! Easy smeasy, and oh so delicious!

We Remember


Hope you took some time yesterday to remember those who lost their lives, and to think about those who lost loved ones, as well as the heroes who risked their lives, in the tragic attack in New York City ten years ago.

Here is an amazing shot from Arrowhead Stadium yesterday, as players, fire fighters, cheerleaders, and soldiers held a field-length flag. The National Anthem was followed by a fly over and fireworks. There was an amazing feeling of American pride and spirit throughout that stadium yesterday, and I am so glad I got to be a part of it. Unfortunately The Chiefs got slaughtered, but it was a great turnout and a great 9-11 tribute.

Grilled Tilapia & Shrimp


We made this great flavorful dish on the grill, and it is a must make if you like fish or shrimp (we did a little of both)

Ingredients
4 tilapia fillets (or any fish would work)
1/2 lb of shrimp, peeled with tail on
2 Tbsp olive oil
5 or 6 cloves of garlic, thinly sliced 
salt & pepper
fresh herbs (we used parsley and basil), torn
1 container of cherry tomatoes, halved
1 c kalamata olives, halved
handful of capers, more if you want
1 lemon

Wrap a shallow baking sheet with tin foil around the top and the bottom. Drizzle olive oil in the baking sheet, and add the thinly sliced garlic cloves.

Place the tilapia fillets and the shrimp on top of the garlic and olive oil. Season the fish with salt and pepper.

Sprinkle with the fresh herbs, halved cherry tomatoes, halved kalamata olives, and capers. Add some lemon juice and scatter some slices around. Drizzle with a little olive oil all over.

Place on top of grill and put the lid down. When the fish is firm and flaky, and shrimp is pink and opaque, you are done! Enjoy!
